GARNISHING
Potatoes cut in slices, simmered in oil with an onion, green peppers and garlic.
DIRECTIONS
Season the pieces of lamb and cook in the oil until golden brown, add the Oloroso sherry
wine and cook until reduce by half. Then, add a glass of lamb stock or water and let it boil
on slow heat for 1 hour approximately. Prepare a mortar with the bread slice, the oregano
and the vinegar, then add the mortar mix to the meat at the end of the cooking time and
let it boil for 15minutesmore. Finally, let themeat stand for 1 hour before serving and add
a handful of currants to give a sweet taste to the lamb.
SERVING
Place the potatoes with onion and pepper in the middle of the dish and the meat on top
with a little bit of sauce, so that the potatoes soak up the sauce and garnish with a thyme
sprig or chopped fresh oregano.
