For 1200 years, Fes has been the cultural capital of Morocco, renowned for its scholars, artists, architecture and cuisine - all of which are steeped in the traditions of the indigenous Berbers, the Moors of Southern Spain, and the Arabs coming from as far afield as Persia and the Levant. Step through one of the magnificent gates of the ancient medina and you immediately find that you have stepped back four centuries. Stretching before you is a labyrinth of some 30,000 pedestrian alleys, some of which are only large enough for one person to pass. Every turn offers a sensory feast of colors, aromas, music, and mystery.
Morocco Cooking Vacations
Perched on the edge of the medina is Dar Roumana, a meticulously restored jewel of traditional architecture, where you will be immersed in the grandeur and comfort of Fassi hospitality. You will be welcomed with a candlelit dinner in the intricately tiled courtyard with its delicate carved plaster mouldings, sunken marble fountain and monumental antique cedar doors. The next morning, your host and chef will take you on a 2-hour guided culinary tour of the souks to purchase ingredients for the first cooking class, an introduction to the principal dishes of Morocco: a variety of subtly-spiced cooked salads, flavourful tagines, and delicate sweets. After an afternoon of hands-on instruction in Dar Roumana´s kitchens, you will dine on the dishes you prepared accompanied by a bottle of local wine and traditional musicians.
In the following days, you will have the choice of excursions to local vineyards, a Roman picnic in the ancient ruins of Volubilis, a visit to a traditional olive press (Moroccan Volubilia olive oil was voted “The World's Best Extra-virgin Olive Oil of the Year" by the Italian guide "Extravergine 2006”), a hand-rolled couscous workshop in the Middle Atlas mountains, a guided tour of the medina’s ancient mosques, tanneries and medersas, and additional cooking classes in the kitchens of Dar Roumana. Or you may simply wish to explore the medina at your own pace and try your hand at haggling in the bazaars.
