Cooking Classes in Morocco

Start your day at 9:30 AM by selecting your cooking class menu.  After deciding upon the menu, your cooking instructor will lead you through the souks of Fez – dodging the donkeys, bargaining with vendors, and will guide you in shopping for the freshest and highest quality ingredients.  After gathering the ingredients for class, you will head to the Café Clock kitchen, where you will begin to prepare your chosen menu.  By 3 pm you will have practiced traditional techniques, understood the diversity of sumptuous flavours and be enjoying the 3-course feast that you have created. You will also have experienced the warm hospitality that's at the real heart of Moroccan cuisine and is the essence of Café Clock's Kitchen!

Menu Options:
STARTERS
Salads choose from:-
Zalouk - the freshest aubergines crushed with spices
Khizou M'shrmel - marinated carrot salad
Barba - beetroot salad
M'kwer - Cabbage and Raisin salad
Jben - Goats cheese with spices

OR

Soups choose from:-
Harira - traditional hearty Moroccan soup
Bissara - split pea or broad bean soup with spices with garlic and olive oil chutney

All starters are served with freshly baked Khobz (bread)
MAINS
Couscous choose from:-
Seksou B Sbe? khdari - Couscous with seven vegetables - as served traditionally in the
family home on the sacred Friday.
Seksou T'faya - Couscous Imperial City - couscous with caramelized onion and raisins
Both served with your choice of Chicken , Lamb or Beef.

OR

Tagine choose from:-
Tagine bel meshmash wl berkok - with apricot and prune
Tagine bel khodra - seasonal tagine made with quince and okra or kok el beldi (wild
artichoke)or fresh peas, the choice is endless in the souk!
The above served with your choice of Chicken , Lamb or Beef
Tagine essoueiri - chicken with olive and eggs
Tagine djaj m'kalli - chicken with preserved lemons and olives
Tagine bel hout - fish tagine (Thursdays and Saturdays only depending on availability
of freshest produce)

Bstella b djaj - the famous chicken pastilla
Bstella bel hout - fish and vermicelli pastille

DESSERT
choose from:-
Letshine bel karfa - orange cinnamon and walnut salad
Ke3b ghzal - hornes de gazelles
Knafa - fried pastilla sheets with cream of rice and orange blossom water
Ghriba bel 3sel honey fessi maccaroons
Blighat b t'mer - Date and pastry rolls
